Curly Dock is a common "weed" that is in the Rumex Family and produces rust brown seed clusters that are commonly found in clearings. Though often overlooked these seeds can be ground into a nutritious flour and used in a large variety of cooking applications.

Today I make a pancake using curly dock seeds I ground into flour. The flour is a dark red-brown and smells rather nutty, it makes a great addition to pancakes, breads, muffins, etc. However, the flour doesn't cook like normal flour due to lack of binding starches so it's best to mix it at least half and half with regular flour. I like to use 1/4 of the flour needed in a recipe of Dock flour for best consistency.

This pancake pairs well with any pancake topping as it tastes very similar to a regular pancake made with whole wheat flour. At the end of the video I serve up the pancake with some Wood Sorrel Syrup I made about a week ago.
