Thai Veggie Zoodle Bowl Recipe

In this video I show you how to make a delicious zoodle recipe with an easy Thai peanut dressing. Wait til you see the food hack I use. It is so simple! Full Recipe + Ingredients: 3 tbsp soy sauce 3 tbsp rice vinegar ¼ cup sesame oil 1/3 cup peanut butter 2 tbsp honey 1 tsp sea salt 2 tbsp brown sugar Pinch(es) of red pepper flakes 1 bag ginger tea 1 zucchini 1 summer squash 1 carrot 1 tbsp cilantro 1 tbsp peanuts 1 avocado 1 lime wedge We’re going to start by making a delicious peanut dressing. First thing to do is add 3 tablespoons of soy sauce to your food processor. Then add in 3 tablespoons of rice vinegar and ¼ cup of sesame oil. Next you want to add in 1/3 cup peanut butter. It’s important to use a creamy peanut butter for this recipe. Add in 2 tablespoons of honey and some sea salt. Put in 2 tablespoons of brown sugar and a pinch of red pepper flakes. If you like your food spicy, you can always add an extra pinch or two. Now it’s time to add in the ginger tea. The reason I use ginger tea in this recipe is because I drink a lot of ginger tea. So, rather than buying ginger and having it go to waste, I simply use the ginger tea. Puree it all up. At this point we’re going to make our zoodles. You can use whatever veggies you want in this, but I’m using zucchini, summer squash and carrot. Start by cutting off the ends of the veggies. Stick each one onto the spiralizer, adjusting the blade as necessary. Run each veggie through the spiralizer and watch those beautiful spinal noodles come on out. Add the zoodles to a mixing bowl with some of the peanut dressing and toss it all together. TIP: I like to start off adding a little bit of noodles at a time. If you add in all the noodles at once it’s harder to coat the noodles. So, add a small amount at a time to ensure the noodles get coated with the dressing. Once the noodles are coated, transfer them to a bowl. Cut up some fresh cilantro and sprinkle it on top. Chop up some peanuts and add those on top too. Then you’re going to slice up some avocado, which you can never have enough of, and add that to the top. Throw on a lime wedge and you’re good to go!
