Handsomely made, easy to use, flour well and dough won't stick, lightweight and durable. Amazon Affiliate Product Link: http://amzn.to/2aiO4au The pizza peel measures 20” long including the handle and has a 12” x 12” paddle surface. At the end of the handle is a hanging hole and a loop of braided jute twine for hanging. Just above the handle is the brand Tesion engraved in the wood. The pine wood is unoiled and sanded smooth with a tapered edge. It is 5/16" thick since pine is a softer wood and the extra thickness lends it strength and durability. My peel consisted of 5 glued pieces and the edges are tapered on both sides and have a 1.5” spread; that makes the flat surface on top and bottom a little bit smaller than the overall 12" and it comes to about 10” in diameter for the flat portion. I made homemade pizza dough for my pizza and although the dough was super wet and sticky, after I floured the peel and rubbed the flour in and made sure the bottom of my crust was dry, I experienced no sticking to the pizza peel. The peel worked great, looks decorative in my kitchen and was easy to clean. If you're interested in the recipe I used for the dough, it's below. No-knead Pizza Dough Recipe 250g All-Purpose Flour 0.5g active dry yeast 2g sugar 6g salt 180g luke warm water (110 degrees F) Combine the dry ingredients in a bowl and add the water. Mix until all the ingredients are wet. It should form a sticky, lumpy, rough dough. Cover it and let it sit for 24 hours at room temperature. After 24 hours, prepare your work surface with plenty of flour. With floured hands, pour out the dough and flour the top of the dough generously if it's very wet. Divide the dough in half. Each one will make a 10-12” pizza crust. Stretch the dough as follows. Pull out one side and then fold it back to the center. Then stretch out the opposite side and fold it back over the first. Turn the dough 90 degrees, and then repeat on the sides you haven’t pulled yet so that all four sides are stretched once. Flip the dough over and pull the edges down towards the bottom to create a ball will a smooth top. Place it smooth side up into a floured glass bowl and cover. Let rise for 45 minutes to an hour. Do the same thing with the other half of the dough. Preheat the oven to 550 degrees Fahrenheit with a pizza stone/steel placed on the center rack. Allow the stone to come up to temperature for 30 minutes AFTER the oven is done pre-heating. After the dough has risen for an hour, flour your work surface again and the top of the dough. Carefully pour it out, keeping the round ball shape. Deflate with your fingertips from the center outward, being careful not to touch the outermost perimeter where it'll form a puffy crunchy crust. Flour your hands and carefully pick up the dough, without squeezing the crust. Stretch the dough with your knuckles by switching back and forth from hand to hand. Let gravity do most of the stretching for you. As you switch hands, turn the dough a few degrees each time so you stretch around all sides. As the dough gets larger, you can use both hands on the same side and walk your knuckles around the pizza, just behind the crust. If your dough tears, set it down and pinch the hole together. Finally, transfer it carefully to the floured pizza peel; make sure the bottom is completely dry and floured. Work quickly adding sauce cheese and topping to your pizza. Do not overfill. Test that the pizza will slide off the peel by shaking the peel gently forward/back and left/right to ensure the pizza is sliding freely. Quickly open the oven, and with a back and forth motion, slide the pizza off the peel onto the stone. Bake for 6-7 minutes. If you prefer a darker crust and have a top broiler, turn the broiler on to low for the duration of the bake. You can use the peel to remove the pizza from the stone. Let the pizza cool and enjoy!
