One great way to reduce your impact on the planet is to grow your own food sustainably or buy it from local sustainable producers. In this video, I demonstrate the process for making tamales from scratch using all locally produced ingredients. I take you through the process of nixtamalizing my own garden-grown heirloom flour corn, grinding it in a special mill, mixing up the masa batter, and shaping and steaming the tamales. No more need to buy rice from distant locales, corn grows well in my backyard, and despite the bad rap it gets for corn syrup's contribution to obesity in the US, it can be a nutritious part of a diverse diet. The recipe I use for this is: 3 cups organic dry flour corn (I used Strubbes Orange Dent) 1 gallon water 2 Tbs pickling lime Batter 1.5 sticks organic butter Masa 1pint canned home grown organic sweet corn or equivalent fresh amount 1 tsp salt, or more to taste Water until right consistency
