Traditional Kentucky recipe for Banana Croquettes (aka Banana Salad or Dressed Bananas) from our good friend. Yum Papa! 2 tablespoons flour 3 tablespoons sugar 1 teaspoon salt 1⁄4 cup vinegar 1⁄2 cup milk 1 egg, well beaten 2 tablespoons butter Bananas Chopped Peanuts Add first 5 ingredients to pan and heat over medium heat until it bubbles. Add beaten egg and stir for 2 minutes. Add butter and stir until melted. Remove from heat and cool. Peel bananas, cut lengthwise and in half. Roll in wet mixture and roll in peanuts until coated.
