Mozzarella is one of the easiest cheeses to make at home. But making mozzarella can be a bit tricky, especially at the end of the process. When making mozzarella cheese at home, the choice of milk is very important. If you can get raw unpasteurised milk, that's perfect, otherwise use non-homogenised milk to make your cheese. UHT milk does not work for cheesemaking.
