I made this a lot and it's really lovely and a big hit with my family. This is the link to Martha's recipe - http://www.marthastewart.com/351448/coconut-lime-berry-cake 3/4 cup *170g* unsalted butter or margarine 1 3/4 cups *225g*self raising flour (or all purpose/plain with 2 teaspoons baking powder 1/2 teaspoon salt 1 cup *75g*packed shredded coconut 1 cup plus generous 1 tablespoon *220g* sugar 3 large eggs or 4 medium eggs 3/4 cup *180ml or 6fl oz*buttermilk 2/3 limes for zest and juice Around 280g-300g grams (2 cups) berries such as blueberries and strawberries (I used 40g Breaburn apple, 140g strawberries, 100g blueberries) The method is simple: Mix salt, coconut and flour in a bowl and set to one side Mix the butter and sugar together until fluffy Add the eggs one at a time until incorporated Add the zest of the limes plus the juice of one lime Add the flour mixture alternating with the buttermilk and fold in Add a few tables spoons of flour and sugar to the prepared fruit and toss until all the fruit is coated Place cake batter in a lined tin and scatter the fruit over the top evenly Bake in a pre-heated oven - 180 or 160 fan - Gas mark 4 for 40-50 minutes Remove from the oven and leave to cool in the tin for 10 -15 mins before allowing to cool on the side Sift some icing sugar over the top to decorate This cake will keep for at least 3 days in an air tight container or wrapped in cling film. No need to refrigerate this cake.
