This loaf cake tastes amazing!

It is very easy and gives great results. It can be made with or without a stand mixer and you can bake this in a round/square cake tin. Remember, if you use a large tin for a shallow cake - it will cook sooner. You'll need to check the cake at around the 30/40 minute mark for a shallow cake.

It's a take on a recipe by someone called Edda - the link is here - http://www.nigella.com/recipes/view/forgiving-banana-cake-2328

To make my version, this is what you'll need:
100 grams butter (or margarine)
225 grams brown sugar
¼ teaspoon salt
2 medium eggs
2 lemon zest
50 grams sultanas
2 tablespoons rum
300-400 grams bananas (overipe - mashed) - 4 medium
2-4 tablespoons flaked almonds
300 grams self raising flour
