You want to just pick the individual leaves. Put them right into the water. Put a little bit of ice in the water. The ice helps to rejuvenate the leaves and make them crispy. Once they sit in the ice water for a few minutes you could drain them out, could run it through the spinner, comes out clean, dry, and vibrant. It could be a garnish for a pasta dish. It could be a garnish for meat or mix it in with greens
