It seems these pop-up cells were being generated by a re-surging nocturnal southwesterly low-level jet. The slightly elevated jet was ramming up against the trailing outflow boundary left behind the squall line that passed through two hours earlier. I wonder if the thick mid/upper stratiform anvil cloud left behind the earlier MCS was inducing extra charge on the fresh updrafts as they rose through it. The lightning was exceptionally strong for disorganized convection that was relatively weak on radar.
