Here is a hearty meal for your Friday night dinner or anytime you want something filling. This was a great recipe sent to me by viewer and I hope you will try it. Follow recipe or be inspired to change it around to your liking.. Let's just get to cooking homemade!!! PINTO BEAN RECIPE: 1 lb sausage spicey or mild ground beef or turkey 1/2 cup onions 1/2 cup bell peppers 1 large can pinto beans 1 can Ro-Tel tomatoes with chilies your choice amount of Velvetta cheese or any other melty cheese 8.5 oz box of corn muffin mix cook sausage or beef, remove from pan and save any drippings in the pan. saute your onions in pan for about 8 minutes then add peppers, cook till tender then add mushrooms for about 3 minutes covered. place cooked meat in the casserole dish. Mix onions, peppers, beans and Ro-Tel- pour on top of meat. Slice Velveeta cover over beans. i layered meat, cheese, bean mixture, then more cheese. Mix corn muffin as directed on box and pour on top of cheese. Bake at 400 degrees until cornbread is golden brown (20 mins) take out of oven and allow to stand for 5 mins and serve.
