Ingredients:

1 and 2/3 cups of flour - (I am using bread flour, but you can use all purpose)

1 tsp of baking soda

1/4 tsp of cinnamon

1/2 tsp of salt

1 cup of sugar

2 large eggs

1/2 cup of canola oil

3 large ripe bananas

1 tsp of vanilla extract

1/2 cup to 2/3 cup of chopped walnuts

***For a more moist banana bread, use an additional half of a banana and 2 Tbs of sour cream

Hello and welcome to In the Kitchen with Matt, I am your host Matt Taylor. Today I am going to teach you how to make amazing banana bread. So if you are like me you will go to the store and you will buy bananas, and a lot of times you don’t eat them all, and they just sit there in your fruit basket, and they get these spots on them, and then they start getting darker and darker, and then you totally stay away from them, and you wind up throwing them away. Instead of throwing them away, make some banana bread. I will show you how, quick and easy, anyone can do it. Let’s get started. For the ingredients we need 1 and two thirds cups of flour, I am going to use bread flour, or you can use all purpose flour as well, 1 teaspoon of baking soda, 1 fourth teaspoon of ground cinnamon, and one half teaspoon of salt, 1 cup of sugar, 2 large eggs, 1 half cup of canola oil, 3 large ripe bananas, 1 teaspoon of vanilla extract, and one half cup of chopped walnuts, you can use more if you like. First preheat the oven at 350 degrees, now I am going to take my cinnamon, baking soda, and salt, and I am going to whisk it in my flour, or if you have a sifter you can sift it in there, whisking works just fine. Ok I am going to put that aside. Now, let us put in our eggs, and add our sugar. And we are going to whisk that together, you can also use a hand mixer if you want. Now add our oil. Add our vanilla extract. I am going to mix that up a little bit. Ok, I am going to set this aside, and now we are going to mash our bananas. We take them and peel them, nice really ripe bananas. I am going to use a meat tenderizer and just kind of mash these up. Get it to where it is a nice paste. That is ready. And then I am going to take my mixture back, and I am going to add my bananas to the rest of this mixture here. Add our walnuts. And now I am going to use a wooden spatula and fold this all together, like so. Ok and now we are going to fold in the flour, little by little. We will mix it in. We will make sure to scrape the sides, periodically, so it all gets mixed in. Add the rest of the flour now. Ok I am going to take my pan and spray it a little bit with my cooking spray, you can also use parchment paper if you want, just a quick little spray. Then let us go ahead an put our mixture here right here in this pan. This is a 9 by 5 inch pan. Ok, and there we go, we will go ahead and put this in the oven and we will bake it at 350 degrees, for 45 minutes to an hour. I am going to start it at 45 minutes, I will take it out, then check it with a toothpick, and see if the toothpick comes out nice and dry. If it is not, if the toothpick comes out wet, then we will put it in for 5 more minutes, and we will keep checking it until it is ready to go. Now we will go ahead and put it in the oven. Ok I took it out of the oven, it was on for 45 minutes, and I am going to take a toothpick and poke it in here, and pull it out, it looks nice and clean, ready to go. Notice it is a little brown on here, that’s ok, I don’t mind it. But if you don’t want it to be this brown, you can go ahead and cover it will foil over the top, about 30 minutes in, and that will help it to not get this brown. It looks good, it is ready to go. Time to eat. Alright our banana bread is done, and now for the break down. Total time to make this about 15 to 20 minutes for the prep and about 45 minutes to an hour baking in the oven. Total cost, one dollar 74 cents give or take. That is a pretty good deal. A specialty bread like this, will run you any where from 3 to 4 to 5 dollars.
