My Facebook fans selected "Man Cave Sandwich" as this weekend's choice of cooks so I decided to make one of my all-time favorite sandwiches... The Cuban.  This sandwich can be varied in a lot of ways with a lot of different cuts of meat and cheeses, but I decided to try to stay as true to a traditional Cuban as possible.  Give this a try and let me know how it goes for you!

The Mojo Sauce:

1/4 cup lime juice
1/4 cup orange juice
1/4 cup olive oil
3 to 4 teaspoons freshly chopped garlic
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
salt/pepper to taste

Directions:  

Heat the olive oil in a small saucepan.  When the oil is hot, add the garlic and stir continuously for 30 seconds.  Add the orange and lime juice and mix well.  Add the rest of the spices and bring to a boil for three minutes.  Remove from heat and cover for 15 minutes.  Transfer to a glass bowl and let sit uncovered for 4 hours and serve!

This sauce can be used for a ton of different things... try marinating some chicken in it or serving it as a sauce on a pulled pork barbecue sandwich.... the flavor of this sauce is simply fantastic...
