A delicious recipe for cheese & spinach stuffed chicken! For this oven baked chicken thigh recipe, we used skinless and boneless chicken thighs. You can also use chicken breasts but it's easier without bones.. Boneless=easier to handle.

There are also many different ingredients you can stuff the chicken with. For example, I used ricotta cheese, spinach, kate and shredded cheese, but you can switch it up. Maybe use cream cheese, bacon and mushrooms! The possibilities are endless!

Chicken thighs are probably not the easiest to deal with but most already come with a 'flap' making it easier to stuff. You just have to use a toothpick to hold it together until it's cooked.

Also a little trick I learned cooking chicken - is to start the oven temp off high - throw the chicken in and immediately turn the temp down to 350. It will slightly crisp the top and then cook the inside. It always ends up being super delicious and moist and never dry. Sometimes I'll also broil it for a few minutes to make it more crispy because.. who doesn't like crispy chicken!

I can't recommend this recipe enough - it just tastes amazing. It's definitely a good way to spice up your chicken - especially if you always have boring chicken recipes like I do.. (mostly plain.. blahhh).. The chicken isn't dry, it's crispy and amazing.

So enjoy my simple stuffed chicken thigh recipe!
