Cucumber Seed Saving & Garnish

Cucumber seed saving is best done with the oldest fruit, one that is large and fully ripe. Letting a Cucumber fully ripen may prevent that plant from producing any new fruit. Split the Cucumber the long way down and scoop out the seeds into a bowl. Remove the seeds from their gel sack with a a towel or a strainer and running water. If removing the gel is difficult, or you are saving seeds in bulk, fermenting them will save you some effort.
