Thai on the fly for the single guy

I tend to make stuff up as I go when cooking. And this is one of those cases. It started off as just a simple garlic and olive oil dish. But, as I was cooking the odors said it needed some Thai seasoning. I know I'm not a professional cook. But, I do enjoy it. So no hate for the peanuts gallery please! Ingredients are listed at the end, and only estimated. I cook by feel. So consider them as guidelines. This really was a great dinner! If you have to have some meat, chicken would be excellent in it or on the side. Enjoy!
