Well, it's a New Moon. Things on the up. I deboned a chicken, seasoned it, stuffed it with dressing (spicy Italian sausage meat, leeks, bread crumbs, garlic, onion, olive oil, Zatarains), and some peameal bacon from the market. Sewed up, olive oil'd the skin, roasted at 350°F until 165°F internal by thermoprobe. Rest 15 minutes, then I celebrated the New Moon. This thing is absolutely fantastic.
