Tonight was my very first attempt at sharpening a knife with a waterstone.  This was done on a Wusthof 3000/8000 grit two-sided stone.  Rather than subject my trusted chef's knife to this treatment, I used a practice knife: an older Dexter Russell brand 11-inch carbon steel butcher knife that I'd acquired at a flea market for $2.  The look of the knife, plus its having a carbon steel blade, identifies this as a vintage knife, but I don't knoy my blad history and can't give an accurate estimate of the year of manufacture for this knife.  Because this was my very first attempt at sharpening with a stone, I used the basic Japanese-style back-and-forth stroke with the knife against the stone, using my thumb as a guide to keep the angle of the blade consistent as it stroked the stone.  After sharpening the knife at 3000 grit, then 8000 grit, I stropped it with a leather belt, and finally applied the paper cut test.  That's an index card, somewhat thicker than a piece of paper.  I hope this was a decent result, for a first attempt at knife sharpening.
