I'm in Vermont right now--the maple syrup capital of the U.S.--for a video piece I'm doing for CNN. This got me thinking about how I most frequently use maple syrup in my kitchen, and the answer is: DIY salad dressing! Olive oil is the always the backbone. Then I'll add some maple syrup and lemon juice. Sometimes I add smashed garlic. Or I substitute the lemon juice for balsamic vinegar. And/or I'll add brown mustard. And sometimes instead of maple syrup, I use honey. There are so many variations! It's really fun to play with!! I'm purposefully not giving you guys a specific recipe for this, because I don't make mine off of a recipe--I like experimenting each time with a different combination of these ingredients. Have fun creating your own salad dressing, that's unique to YOU! :)
