Chocolate Covered Coconut Balls with Salted Nuts

This is My First Time to make these delicious treats. It was pretty easy! I will be making these again! Chocolate Covered Coconut Balls with Toasted and Salted Crushed Almonds. It's a mouth full! I was checking out the recipes online to copy the Bounty Chocolate Bar and there were so many different recipes that all called for the same ingredients, so I used them as a base idea and went for it! This will be a mix, chill, melt, chill, order. 2 Cups Sweetened Shredded Coconut 3/4 - 1 Cup Sweetened Condensed Milk Chocolate of choice for melting, I used: 1 1/2 Cup Carob Chips 1 square of Un-sweetened Bakers Chocolate 1 Tablespoon of Shortening Nuts to garnish if you want. I used: Approx 15 whole blanched Almonds Toasting them in a small dry frying pan with some coarse sea salt over low heat tossing frequently. Once they warmed up a bit, I chopped them on a chopping board and then continued to toast them in the pan until golden. Mix the Sweetened Condensed Milk into the Shredded Coconut until very moist and sticky. They need to be wet enough to stick together and not crumble. Roll into approximately 1 Tablespoon size balls and set on a lined cookie sheet. Put a toothpick in each one and Put them in the freezer to firm up and chill out =) I left them in over night. I don't know what the minimum set time is. Once the Coconut Balls are firm, Melt the chocolate in a double boiler, or a proper glass or metal bowl over water. Not directly over heat. If you know how to properly melt chocolate in the microwave, go ahead and do that =) I have no clue how that's done. lol. Remove the Coconut Balls from the freezer, I also took the chocolate off the heat to do this part. Using the toothpick, dip the coconut ball into the chocolate and let the excess chocolate drip off or use a spoon to remove the extra chocolate. Put back onto the tray and sprinkle with what ever topping you want to use. You want to sprinkle while the chocolate is still wet so it sticks to the outside of this treat. Once you have dipped all the balls in chocolate, stick the tray back in the freezer to firm the chocolate. This only took about 20 minutes for these ones to set before we had our first taste. They were amazing! I'm not sure how long the shelf life of these are because they only lasted 2 days in the fridge. They were fairly easy to do and I'll definitely be making them again.
