Vegan Nut Dressing Recipe & What I Ate On Mother's Day

I hope everyone enjoyed their Mother's day and ate lots of yummy, vegan food. This is what I ate in a day as a vegan on Mother's day. I also share my nut dressing recipe. I hope you enjoy!

Ingredients:
-1 cup raw walnuts
-1 cup raw cashews
-1 cup raw pumpkin seeds 
-3 tbsp whole grain dijon mustard
-2-3 tsp garlic powder (depending how much you like, I like a lot, so go with 3)
-2 tbsp miso paste
-4-5 large medjool dates
-3 tbsp apple cider vinegar  
-32 oz plant milk / whole container / 4 cups

In a high power blender (like a vitamix) blend together everything, aside from one cup of plant milk. Start with 3 cups and then go from there. You can stop at 3 cups, if you like it thicker, or you can add in the last cup at the end, to make it thinner, like shown in this video. I like to use the whole 32 oz when making a salad dressing, and I use 3 cups when I like to put it on things like cooked veggies, quinoa, stir-fries, burritos, etc. 
It's up to you. 

Alternatives:
You can use any nuts and seeds you like. I really enjoy this combo, but I play around with other nuts and seeds too, and it always comes out good. This is just our favorite. 
-You can use a raw garlic clove or two instead of powder. 
-You can use liquid aminos if you don't have miso paste.
-You can add some chili flakes, if you want it spicy. 
-You can use maple syrup if you don't have dates.
-You can add some cooked cauliflower if you want to cut the fat down a little. I'm going to be doing a cauliflower sauce/dressing recipe soon too. 

*I've done all of these alternative swaps before, and the dressing still always comes out really good. 

Of course, adjust things to your taste preference. If you like your dressing sweeter, add more dates (or maple syrup), if you like a little more of a salty taste, add more miso paste (or liquid aminos).
