Today was a cold and windy day, but that didn't stop us from making some delicious venison tenderloin in a bacon weave. First we trimmed up our tenderloin by getting all that silver skin off of it. Then we seasoned it with just some salt, pepper, garlic, ground mustard, and some spicy Montreal seasoning.

Next, we got our bacon weave ready and the weave for this tenderloin took about a pack and a half of think bacon. Once the weave was complete we put our tenderloin right in the middle of it and used our parchment paper to roll that tenderloin right up.

Now its time to go get that pit ready, whatever pit your working on just make sure you get it up to that 275 mark before you put your venison on. We went ahead and pulled it off when that internal temp hit 140 so we were right in that medium range. After we had let it rest for between 10 and 15 minutes it was time to go ahead and dig in.
