Vegan Fettuccine Alfredo Recipe (Easy & Healthy)

This is a Delicious Vegan Fettuccine Alfredo recipe I came up with. This is pretty low fat and low sodium. You can always change a few things, if you want. Check below for recipe and some substitution ideas. 

Recipe
-1 box of pasta (some kind of thick Fettuccine type noodle. I really loved the Eden spinach noodle ribbons)
-1 package of tofu (I used silken tofu, but you can use soft, firm, or extra firm also. Any should work)
-1/2 cup of non-dairy milk (I prefer cashew, hemp, or flax. You can use whatever you want, just make sure it's unsweetened and unflavored)
-1 package of peas (2 cups-you can use less or more if you want)
-1 package of mushrooms
-3-4 scallions Cook up all the white, some green. Save a little bit of green to garnish.
-2 big spoons of vegan cream cheese (about half a container) 
-1/3 cup of nutritional yeast
-1/2 Tbsp of garlic powder
-1/2 Tbsp of onion powder
-1/2 Tbsp of Italian seasoning 
-salt & pepper to taste

*Top with some kind of vegan cheese, such as vegan parm or daiya shreds.  

Some substitution ideas-
-If you don't have vegan cream cheese you can add about 1/3 cup of raw cashews to make it rich. 

-If you want it to be lower fat and don't want to add vegan cream cheese or raw cashews, you can just use the tofu and add less non-dairy milk (cut in half).

-Little tip, if you find that your sauce is too watery for your liking, you can add a little bit of chia seeds to thicken it up some. But, don't worry if it's a bit runny looking, it will thicken up and dry out a bit as it is mixed in with the pasta and sits a few minutes. 

-If you don't have a blender that heats up, you can just dump the pasta back in the pot you cooked it in, then add sauce and heat up a bit. Or you can heat the sauce separately in sauce pan. 

-You can always use a white or yellow onion instead of the scallions. Scallions is really for some color. You can always cook with an onion, then top with some fresh green herbs, anything like basil, parsley, chives, etc. 

-You can always use fresh garlic instead of garlic powder. I would actually prefer it that way. I was doing a simple, lazy recipe today. I really love garlic, so I would probably throw in 3-5 finely chopped cloves of garlic in with the mushrooms and scallions, towards the end.  

-Feel free to add any other kind of veggies, like spinach, broccoli, whatever your heart desires. The world is your oyster...whatever the hell that means. There are some weird phrases. Did you ever stop and wonder where people came up with this sh*t? What about the one "kill two birds with one stone", huh? Think of the sicko who must of came up that saying. The worst part is people use it everyday....
...I say instead of killing two birds with one scone, how about we feed two birds with one scone? A vegan scone of course.
