Making bean to bar chocolate

I love chocolate. So it surprised me to realize I don't know how it gets from a cocoa bean to that delicious chocolate bar I buy at the store. Lucky for me, there's an awesome chocolate company in Red Hook, Brooklyn--Raaka Chocolate--that offers tours to show how they make their "virigin" chocolate (their bars are raw--they don't roast them at high temperatures like a lot of other companies). Connor and I did this tour, and left with a ton of knowledge about chocolate and some personally hand-crafted bars to take home with us. Check out Raaka at www.raakachocolate.com
