Hi Guys, today I’ll make you easy fish tacos that are perfect for a weeknight dinner. I’ll lightly coat the fish with spices and flour and shallow fry them. They’ll be topped with a fresh tomato salsa and sour cream. Let’s get started on this quick and delicious meal. 

This is a one pound fillet of wild cod. Use a firm white wish if you can’t find cod. To season the fish, we need ½ tsp garlic pwder, ¼ tsp cayenne and ½ tsp salt. In my bowl, I have 1 cup of all purpose flour and ½ tsp salt mixed together. For the fresh salsa, I have some cilantro, tomatoes, fresh lime, white onion and green chiles. You can use as many or few chiles as you would like. We’ll also need some white corn tortillas.

In my bowl, I have ½ medium onion chopped and 1 small green chile chopped, I’ll add 2 tomatoes chopped and cilantro, about 2 big tbsps. Squeeze a little lime juice over it. Add ½ tsp salt. Give it a good mix. Taste and add more salt or chiles if you’d like. 

Heat up a pan with vegetable oil. I’ve cut up the cod fillet into small chunks about 1 inch pieces. Add the spices and salt, mix well. Put the fish into the flour and mix. The fish will be light and crisp on the outside. Have a plate lined with paper towels ready and get out your slotted spoon or strainer. Gently drop the fish into the hot oil. Cook for a few minutes on both sides until light golden brown. The fish cooks really fast in about 5 minutes. Our fish is ready. Now we’ll heat up our tortillas. These heat up in 15 seconds. I transfer them to a plate and cover with a clean cloth to keep them warm while I’m heating up the rest. These tortillas are thin so I use two per taco. Let’s assemble our tacos. It’s ready to eat. I don’t like cheese on my fish tacos, of course you can put some on if you’d like. A dollop of sour cream is nice on top. Mmm, you’ve got the soft taco, crispy spiced fish, tangy salsa, there’s nice crunch from the onion, bite from the cilantro and the sour cream is perfect on top. These tacos are colorful, fresh and you’ll want to dig right in.
