When growing leafy greens like Kale, Chard, and even Leaf lettuce, you don't have to wait for the whole plant to mature to harvest the entire head at once.  Instead you can wait until each seedling has about eight to ten leaves each and then harvest just the outer leaves for cooking and the interior plants going to regrow for additional harvests.
