As a kid I remember those god awful tins of macaroni cheese, with that horrid luminous cheese like sauce. I loved them of course (and I still do...kind of), probably because of all the sugar and salt that was in them! Now, to make macaroni cheese, it really isn't hard at all. And it's completely up to you what cheeses you use, so experiment a little and see what works for you.
To make my macaroni cheese you will need:
650ml milk
50g butter
3 tbsp plain flour
250g mature cheddar cheese (sharp cheddar)
3 bay leaves
2 garlic cloves
1 tsp English mustard
Pinch of nutmeg
About 50g of parmesan cheese
Salt & pepper
FOR THE HERB CRUMB
About 50g of fresh breadcrumbs (whizz up bread in a blender, it's that easy)
A good handful of fresh parsley
30-50g of grated parmesan cheese
Salt & pepper
