There are several side-missions in GUN, all of which will increase some of your stats. It is rather essential to complete at least a few of these missions, as later missions will become more difficult than they should be if you ended up ignoring them.

The Ranch Hand missions are mostly tasks involving farming, herding, etc. There's not too much action here, but in the later missions, you will have to fight off enemies. These missions are a nice change of pace, though.

There are three missions in this video. The first two missions involve more action; the former has Cole taking out wolves that are attacking cattle, and the latter involves the infiltration and execution of cattle rustlers; afterward, Cole has to bring the stolen cattle back to the ranch. The third mission here is very similar to the very first Ranch Hand mission.
