In this video I coach ToxicAce on his execution of Lobber's powerful 1 base Robo All In. The build is designed to hit at 10:30 with 4 Immortals, a lot of Sentries and a few Stalkers with fast reinforcements and maneuverability provided by the Warp prism. 

The standard way Zerg reacts to 1 Base Protoss builds is Lings and Spines or mass Roaches, this build is very strong against Roaches and Spines and ForceFields can negate Lings. Hydra or Mutalisks cannot come in time to be effective.

As Zerg the key to defending is excellent scouting and forcing the Protoss to waste their ForceFields before they get to your base. Burrowed Lings (as mentioned in the video) can also work but that is a bit less reliable. 

As with all one base builds this can be defended if your opponent makes little to no mechanical errors and scouts correctly. This doesn't seem to happen that often.
