OVEN ROASTED SPINACH-STUFFED TOMATOES Inspired by: I Just Like To Cook's Video - Smoked Parmesan Tomatoes Recipe: http:/youtube/38LPmgEkHM8 INGREDIENTS - 1/8 tspn of garlic salt - 1/8 tspn of pepper - 1 tspn italian seasonings - 3/4 cup of bread crumbs. (COOK'S NOTE - I used a 1/2 cup of flavored croutons and 1/4 cup of dry unflavored bread crumbs ground together.) - 4 Tbs butter, divided evenly - 1/2 cup of your favorite cheese. I used Sargento® Fine Cut Shredded 4 Cheese Mexican blend. You can use mozzarella. - 1 package of frozen spinach (10 oz.), thawed and squeeze dried. - 3 Tbs of real bacon bits. - 6 medium sized tomatoes of 4 large DIRECTIONS 1. Cut a thin slice off the top of each tomato. 2. Scoop out pulp, leaving a 1/2-in. thick shell. 3. Invert tomatoes onto paper towels to drain. 4. Melt 2 tablespoons of butter in a skillet. Add spinach; cook and stir 7 minutes. 5. In a bowl, combine bread crumbs and Italian seasoning. (COOK'S NOTE - I ground flavored croutons and bread crumbs with the italian seasonings for this step. 5. Set aside 1/4 cup of crumbs for topping the tomatoes. 6. Add spinach, cheese, and 2 Tbs of bacon bits to remaining crumb mixture. 7. Sprinkle tomato shells with garlic salt and pepper. 8. Stuff tomatoes with spinach mixture. 9. Place in a greased 13-in. x 9-in. baking dish. 10. Melt remaining butter in skillet and toss with the 1/4 cup of reserved crumbs until crumbs have absorbed butter. 11. Sprinkle bread crumbs and remaining 1 Tbs of bacon bits over tomatoes. 12. Bake, uncovered, at 375° for 20-25 minutes or until crumbs are lightly browned. 13. Serve and enjoy! :-) NUTRITIONAL INFO.
