Today I decided to get a little Man Cave Surf & Turf going for dinner. I tried two new things tonight... the first being the reverse sear technique for cooking steaks. I did this with burgers last week and they were excellent. I'll have to say that these steaks were a huge success. Mine was probably the most tender and juicy I have ever grilled myself. Tonya's well done steak must have been good too because she ate all of it and commented about how tender and juicy it was (if that can ever be the case on a well done cook!) I was quite satisfied with this but I want to experiment with some different searing techniques. I figured the cast iron pan would give me a nice even sear, and it did for the most part but I'm thinking I need to do this on a screaming hot grill instead of the pan next time. The Buffalo Shrimp did not turn out as well as I had hoped. First of all, don't put the sauce on the shrimp and put it back in the fridge. Wait until they are ready to go on the grill to sauce them. It would probably be best do sauce them and then dredge them in flour before going to the egg wash. The panko bread crumbs did not hold well on the shrimp. These may work best by using a batter and deep frying them instead of putting them on the grill...
