I haven't made any jerky in ages so I decided to make a small batch and perform this experimental cook on the ugly drum smoker. All my previous jerky has been made in a dehydrator. If I wanted smokey flavor, I used liquid smoke, which only works marginally well in jerky. The trick was going to be two-fold in this experiment. I needed to get the UDS to hold a temp at about 160° or so for the duration of the cook, and I needed it to actually dry out the meat, which would require some amount of airflow.
