I don't normally make videos on cooking topics like this, so I decided to make one today. I love pound cake and I killed several birds with one stone on this video. I wanted to try out my new Kitchenaid mixer that I bought to replace my old one and I wanted to produce a recipe video to enter "Smokyribs1" subscriber appreciation contest by posting a recipe video response. Here's a link to his contest video for those of you who might want to enter: http://www.youtube.com/watch?v=aFtuqTVa68o Here's the recipe for my Blueberry Cream Cheese Pound Cake: Ingredients: 3 sticks of unsalted butter, softened 1 8oz package of cream cheese, softened 3 cups sugar 3 cups all-purpose or cake flour 6 eggs 1/2 teaspoon baking powder 1/4 teaspoon salt 2 teaspoons vanilla extract 1 teaspoon lemon extract 1 cup blueberries, thawed if using frozen Directions: Preheat your oven to 325° F. Cream butter and cream cheese together in the mixer then slowly add the sugar and mix completely. Add the eggs one at a time with the mixer on slow speed and then add the flour, salt, and baking powder slowly until it is completely mixed in. Add the vanilla and lemon extract and mix for another minute or two. Slowly fold in 1 cup of blueberries. Add the cake batter to a tube pan and cook for 1 1/4 to 1 1/2 hours until an inserted toothpick comes out clean. Remove from the oven and cool in the pan for 10-15 minutes then remove from the pan and cool completely. Enjoy!
