Chinese Aubergine & Lamb Parcel Recipe (Chinese Cooking Channel)

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

A great combination of aubergine and lamb. fabulous for party or buffet. 

Ingredients:
2 aubergines
250g minced lamb
1 teaspoon ground white pepper
1 teaspoon salt
Half of a cm ginger root
100g Plain flour
2 eggs
100ml milk

Methods:
Chop ginger

Place mince lamb into a bowl and add ginger, white pepper, salt, 1 Tbsp of oil and mix well

Slice aubergine into 0.5cm thick slices and then Insert a cut between each slice to create a pocket like so

Take about 1 Tsp of mince and stuff into the pocket until all complete

Combine plain flour, salt and eggs to forms a batter

Heat 1 litre of oil in a wok until hot

Dip stuffed aubergine into the batter mix 

Place into hot oil and deep fry for 2 minutes each side

Remove from oil and drain 

Transfer onto a dish, garnish and then serve
