Fire up the grill with this perfect marriage of two classic Filipino drinking buddies. #Served

INGREDIENTS:

500g pork shoulder, sliced
500ml lemon-lime soft drink
1 ½ cups soy sauce
½ cups vinegar
1/2 ground black pepper
1 cup brown sugar
6 garlic cloves
4 siling labuyo
10-12 finger chillies, sliced
1 cup banana ketchup
Cooking oil
250g firm tofu, sliced into cubes
3 red onions, cut into quarters

PROCEDURE:

1. In a large bowl, combine lemon-lime soft drink, soy sauce, vinegar, brown sugar, black pepper and garlic. Add pork and massage meat to fully incorporate.
2. Fry tofu cubes and set aside.
3. Thread 2 to 3 meat slices into each skewer alternating with fried tofu, onions and finger chillies. 
4. In a bowl, combine remaining 1 cup of soy sauce, banana ketchup and some cooking oil.
5. Grill meat over hot coals for about 2 to 3 minutes each side. When pork starts to lose its pink, baste with soy sauce-ketchup mixture. Continue to grill and baste, turning on sides, until meat is cooked through.
