Video Cooking Demonstration and Recipe of Ants Climbing a Tree. This healthy, fast, colourful one pot dinner will delight young and old alike. We had this dish at a restaurant in Melbourne and had to replicate it. We think we came pretty close. This Asian meal is so called as it simulates the appearance of Ants Climbing a Tree. The snow peas are the leaves, the carrots are petals, the noodles and asparagus are tree branches and the meat is Ants. The delicious glossy sauce could be sap. If it gets the kids to eat their veges, a bit of fun in the kitchen is worth it. We hope you give it a try, we think you will be happy you did.
INGREDIENTS:
500 grams lean pork mince
80 grams thin rice noodles soaked in boiling water until soft
20 grams potato flour mixed with a little cold water
20 grams sesame oil
100 grams sliced carrot
50 grams sliced celery
10 grams diced capsicum
2 chicken stock cubes
100 grams snow peas, cut in half
250 grams of water or enough to make a loose glossy sauce
40 grams oyster sauce
20 grams grated ginger
2 cloves diced garlic
80 grams sliced onion
30 grams oil
2 asparagus spears cut into little logs
spring onions and parsley leaves to serve.
METHOD:
Stir fry meat in oil over a high heat, add carrots,stock cubes,  asparagus, garlic, ginger and onion, keep tossing until all coated and the vegetables have softened slightly but still retain their vibrant colour and the meat is cooked. Add remaining ingredients and drained noodles and toss to coat with sauce. If sauce gets too thick add a little more water. Serve with sliced spring onions and sprigs of parsley.
