Thai Peanut Dipping Sauce Recipe (Asian Cooking Recipe)

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Ingredients:
1 Tbsp peanut oil
2 cloves garlic
1 small onion
2 fresh red chillies
1 lemongrass
180ml coconut milk
2 Tbsp fish sauce
2 Tbsp (70g) dark brown sugar
140g crunchy peanut butter
½ Tsp curry powder
1 Tbsp lime juice

Method:
 1. Finely chop garlic and onion. 
 2. Finely chop lemongrass and chillies. 
 3. Heat 2 Tablespoons of oil in a pan. 
 4. Cook garlic, onion, lemon grass and chilli for 3 minutes until softened.
 5. Add sugar and curry powder, fry for a minute.
 6. Add peanut butter, coconut milk, cook for 2 minutes.
 7. Then squeeze in the lime juice.
 8. Reduce heat to low and simmer for 2 minutes until sauce thickens, stirring regularly.
 9. Transfer into a dish. 
 10. Serve with Thai crispy chicken parcels.
