Recipe: Soya Chunks Pulao-Tawa Soya Pulao-How to make Soya Pulao-Kalimirchbysmita-Ep339

Ingredients:
1) 1 Cup=200gms Long Grain Basmati Rice-(cook this rice) or you can use 2 Cups of Leftover Rice
2) 3/4th Cup =40gms Soya Chunks
3) 2 Large=180 gms Tomatoes-finely chopped
4) 1/4th Cup=50gms French Beans-chopped into lengths
5) 1/4th Cup=50gms Carrots-chopped 
6) 1/4th Cup fresh Coriander Leaves-chopped
7) 1 small=50gms Potatoes-finely chopped
8) 1 Large=100gms Onions-sliced
9) 1 tsp Cumin Seeds
10) 1/2 tsp Turmeric Powder
11) 1 1/2 tbsp Ginger-Garlic Paste
12) 2 tsp Kashmiri Red Chili Powder
13) 1 tsp dry Coriander Powder
14) 1 1/2 tbsp Pav Bhaji Masala (can be replaced with 2 tsp Garam Masala + 1 tsp Dry Mango Powder)
15) 1/2 tsp Chat Masala
16) 1 tbsp Lime Juice
17) Salt
18) Butter

Steps:
1) We will start with cooking of vegetables. We will boil 4-5 Cups of water in a pan. Add some Salt and pinch of Sugar. Salt enhances the flavor of vegetables and Sugar enhances the color
2) Add Veggies-Carrots, Potatoes and French Beans. We must cook vegetables completely in the boiling water. Meanwhile, we will cook Soya Chunks
3) Boil 2-3 Cups of water. Season water with some Salt. Add soya chunks and cook on low heat for 2 mins. Remove from heat after 2 mins. Wash under cold water to stop cooking
4) Remove vegetables from hot water after 5 mins of cooking. Put Cooked vegetables in cold water. This helps in maintaining the color and the crunch of cooked veggies. We have vegetables cooked and soya chunks cooked too. Gently squeeze out the water from Soya chunks
5) You can use non-stick Pan for making this Pulao. Heat 3 tbsp Oil on Tawa. Add some butter and let it melt completely. We are cooking on medium-high heat
6) Add Cumin Seeds and let it splutter. Add Ginger-Garlic paste and cook to get rid of raw smell. We have cooked Ginger-Garlic for a min. Add sliced Onions
7) Cook until Onions become soft. After 3-4 mins Onions become soft. Add chopped Tomatoes. Add some Salt and stir well. Cover and cook on low heat
8) Uncover after 6 mins of cooking. Tomatoes have become soft and mushy. On medium heat, add fresh Coriander leaves. Add spices- Turmeric Powder, Red Chili Powder, Dry Coriander Powder, Pav Bhaji Masala. 
9) Cook the masala with Tomatoes. Add some water when masala becomes dry. We have cooked Masala on medium heat for about 6 mins. 
10) Now add cooked vegetables and cooked Soya Chunks. Add Salt to taste and mix well. The vegetable and soya chunks are already cooked, so we must just mix it with masala. 
11) We have cooked vegetables and soya chunks for 2 mins. Now, add cooked rice. I prefer refrigerating cooked rice for 15 mins before putting it in Tawa Pulao. This ensures that rice grain remain intact after cooking. You can also use leftover rice in this recipe
12) Add some Coriander leaves, Chat Masala. Gently mix all ingredients with two forks (prevents rice grains from  breaking). Rice is mixed with the vegetables. Now, add lime juice and mix well

Tawa Soya Pulao is ready. Serve hot.
