Stir Fried Aubergine & Green Pepper (Chinese Style Vegetarian Cooking Recipe)

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

This is one of my favourite vegetarian dishes so full of flavour. If you like aubergine, you are going to love this!  Serve it with rice. 

Ingredients:
2 aubergines
1 large green pepper
2 tomatoes
2 spring onions
3 cloves garlic
0.5cm ginger
1 Tbsp soy sauce
1 Tbsp sugar
4 Tbsp cornflour
Salt to your taste

Methods:
 1. Finely chop the spring onions, garlic and ginger.
 2. Cut green pepper and tomatoes into bite-size pieces.
 3. Peel and halve aubergine, then cut into bite-size wedges.
 4. Place aubergine into a large mixing bowl and toss with cornflour – ensure an even coverage.
 5. Place aubergines into 1 litre of hot oil. 
 6. Deep fry for 6 minutes until lightly golden, then remove from oil and drain.
 7. Heat 1 Tbsp oil in a wok, add spring onion, garlic and ginger, fry for few seconds.
 8. Add tomato and pepper, fry for a minute.
 9. Add aubergine, soy sauce, sugar, salt and stir-fry for a minute.
 10.Transfer to a dish and serve.
