Thai Chicken Stir-Fried Rice Recipe (Asian Spicy Chicken & Rice Recipe)

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.

Serve this with Thai curry dishes.

Ingredients:
400g chicken breasts
400g pre-cooked cold rice
60ml peanut oil
1 medium size onion
3 cloves garlic
2 green chilli peppers
1 Tbsp brown sugar
2 medium red sweet peppers (350g – 400g)
200g green beans
2 Tbsp fish sauce
200g Thai basil leaves
Salt to taste

Methods:
 1. Finely chop the onion, garlic, chilli peppers.
 2. Roughly chop the green beans; slice pepper thinly.
 3. Cut chicken into small cubes.
 4. Heat peanut oil in a wok.
 5. Add onion, garlic, chilli and stir-fry for 2 minutes.
 6. Add sugar and stir-fry for a minute until dissolved.
 7. Add chicken and stir-fry for 5-8 minutes until light brown.
 8. Add the sweet pepper, green beans and stir-fry for 3 – 5 minutes until the chicken is cooked.
 9. Add rice, fish sauce and stir-fry for 5 minutes until rice is heated through; add basil and toss.
 10.Transfer to a dish and serve.
