Just when I thought I knew what I was doing, I found out that I did not. Clarified butter does NOT equal ghee. I was pointed in the right direction by a friend this week and now the situation is under control. THIS is how I will be making ghee from here on out. I like to use ghee for pan searing and to sautee veggies as well as quite a few other things....
