This recipe was inspired by the cookie sandwich that could be found at Walt Disney World. It's a carrot cake/cookie sandwiched with a cream cheese frosting center.

Recipe //

Carrot Cake:
2 Cups Flour
1 1/2 tsp Baking Soda
1 tsp Baking Powder
1 tsp Ground Cinnamon
1 tsp Cloves
1/2 tsp Nutmeg
1/2 tsp Salt
4 oz Butter
1/2 Cup Brown Sugar
1/2 Cup Sugar
2 Eggs
1 tsp Vanilla Extract
1 1/2 Cup Grated Carrots

Bake at 350 degrees for about 12 minutes
Baking time may vary on your oven, you can always check with a toothpick or skewer and if it comes out clean you'll know it's ready

Frosting //
8 oz Cream Cheese
6 oz Butter
Pinch of Salt
4 - 5 Cups Powdered Sugar
