HOLY MOLY! My kitchen has never seen a baked good before in it's life... So this is pretty epic! PUMPKIN MUFFINS with a SPICED PROTEIN FROSTING! Nothing really sounds better than that, don't you think? Wait, no... What makes this recipe EVEN BETTER = The Pink Haired Chef, Mariko, joined me in the kitchen to help me make these luscious and sinless treats! I ate like 5 of them when we baked them up, tooooo good!
Thanks to Better With Veggies dot com (http://betterwithveggies.com/pumpkin-cupcakes-with-spiced-protein-frosting/)... I popped my kitchen's cupcake making cherry... Wait, I guess I popped mine as well, and I don't think I would call it a cherry since there are no cherries in this recipe, instead I will say, that Mariko and I popped my kitchen's pumpkin, LOL! Oh yea, that makes... FAR MORE SENSE?
These cupcakes are insanely healthy... Made with stevia, flaxseed, pumpkin, un-sweetened cocoa powder and protein powder... Oh and the secret ingredient of spinach... YOU CANNOT GO WRONG! Far HEALTHIER than Sprinkles Cupcakes and Crumbs Cupcakes - Those two places are by far the most popular cupcake joints in Hollywood that's for sure! It's kind of funny that they are because if you believe the stereotype that celebrities don't eat, then why are celebrities always photographed with this sugar ATOMIC BOMBS?
Here is the recipe to these INSANELY AMAZING cupcakes. I really really really did like them and I am totally craving more right now - TOO BAD my big mouth ate the batch of 12 I made and ATE THE RAW BATTER too!
Ingredients (5 servings)
For the cupcakes
9 egg whites
1 cup pumpkin
2 ounces spinach
3 Scoops Chocolate Protein (I use Vega Performance Protein)
6 Tablespoons ground Flaxseed
1/3 CUP baking stevia
3 Tablespoon Unsweetened Dark Chocolate Cocoa Powder
2 Teaspoons Baking Powder
For the frosting
3 tablespoon vanilla protein powder (I use Vega Performance Protein)
3/4 tsp cinnamon
9 drops stevia
1/4 -- 1/2 tsp ginger
1 tsp almond extract
Instructions
Start by combining egg whites through spinach in a blender and mix until all ingredients are smooth and combined. Add remaining cupcake ingredients and blend until incorporated. Divide evenly into muffin tins or silicone muffin cups.
Bake at 350 for 25-30 minutes or until cupcakes spring back when lightly touched. Allow to cool completely.
To make frosting, mix all ingredients in a small bowl. Slowly add a little water to the mix, stirring until smooth (amount depends on your protein powder). Spread evenly on top of each cupcake (i used a cake frosting knife to make this easier. Store in an airtight container in the fridge. Will keep for up to 1 week.
Oh hey, according to BETTER WITH VEGGIES - if you follow the recipe 100% according to the guidelines above, one cupcake is 200 calories. Since Mariko and I actually made 12 cupcakes though, each of our cupcakes surmounted to ROUGHLY 83 calories each! BOOM! So me eating 5 of them, really... NO BIG DEAL... Not that I count calories anyways! Bah ha ha ha! However, if you do, maybe 416 calories ain't exactly small... WHATEVER - these are delicious, you only live once and you might as well live as healthfully as possible! :)
