I found this recipe on Tasteofhome.com and make it for my husband as it's quick, easy and tasty. You could use low-carb tortillas, for a low-carb version. Makes 4 servings, but I only made 3 in the video and adjusted some ingredients accordingly. Also the recipe calls for both provolone and mozzarella cheeses, but I only used mozzarella, but you may want to try them with both.

INGREDIENTS:

2 Tbsp Olive Oil, divided
4 Tortillas, 8-10" each (can use low-carb)
1/2 cup grated Parmesan, divided (I used less)
125g or 1/4 lb each very thin sliced ham and salami
125g or 1/4 lb sliced provolone or mozzarella
1/2 cup julienned roasted red pepper strips
1 cup (4 oz) shredded Mozzarella cheese
marinara sauce or pizza sauce for dipping, optional

METHOD:

Preheat oven to 425F/210C (A bit lower if fan forced). Brush a little olive oil on one side of the tortillas and sprinkle with 1/4 cup of Parmesan cheese (I used just a light sprinkling). Layer tortillas with ham, provolone cheese, salami, red peppers, and mozzarella cheese. Fold in sides of tortillas and roll up.

Place seam side down on parchment lined baking tray. Brush with remaining oil, sprinkle with remaining Parmesan cheese. Bake for 9-12 minutes or until golden brown. Serve with marinara sauce or pizza sauce, if desired. Visit and Like us on Facebook: https://www.facebook.com/Annas-Kitchen-1686376324950749/
