How to make faux stuffed baked 'potatoes' (Paleo/Primal/Low Carb)

This is a delicious low-carb recipe I've had for years that we really love, it's just delicious. It would suit a Paleo/Primal diet (if you include dairy products) or most low-carb plans. FAUX STUFFED BAKED 'POTATOES' 500g (about a pound) cauliflower (I use frozen) A small (3 oz) package cream cheese (softened), or about 1/3 of a tub 1 cup shredded cheese (Tasty or Cheddar) 1/4 tsp salt, or to taste 1/4 tsp pepper, or to taste one very small onion, chopped 50g (1.75 oz or about 1/2 cup) diced ham or bacon Fry the onion and the ham or bacon together until the onions are translucent and the bacon or ham is lightly browned. Meanwhile cook the cauliflower in the microwave for about 8-9 minutes on high until it's fork-tender. Mash slightly to break up any large chunks. Mix in the cooked meat and onion, cream cheese, shredded cheese, salt and pepper and stir to combine. Spread in a greased 2-quart casserole dish and bake uncovered at 350F / 180C for 30 minutes or until browned and bubbly.
