I've been vegetarian for years now, but my husband isn't. This is something I used to love to make and I got the recipe from a 1971 Campbell's Soup cookbook called "Most for the money main dishes." I still make it for my husband and it's one of his favourite meals. He says the pork comes out very tender, and just melts in your mouth. Sounds just like I remember it! The gravy is pretty awesome, too. I'll give the original recipe, as well as my modifications.

INGREDIENTS:

6 pork chops - about 1-1/2 lbs (I used 3 large chops / 500g or 1 lb)
1 can (10-3/4 oz) condensed golden mushroom soup
(or cream of mushroom soup w/2Tbsp tomato paste, sauce or ketchup added)
1/4 cup water
1 cup carrots, thinly sliced diagonally (I would use 3-4 carrots)
1/2 cup chopped onion
generous dash rubbed sage
1 small green pepper (capsicum), cut in strips (I used red)

METHOD:

In skillet / large frying pan, brown chops (use non-stick spray or shortening if necessary) pour off fat. Stir in soup, water, carrots, onion, and sage. Cover; cook over low heat 15 minutes. Add green pepper; cook 15 minutes more or until done. Stir occasionally. Makes 4 servings (we got three). Visit and Like us on Facebook: https://www.facebook.com/Annas-Kitchen-1686376324950749/
