These Barbecue Chicken Quesadillas are so easy to make, and you don't even need a grill or sandwich press. If you can find cut up chicken already marinating in barbecue sauce at your deli, you can use that - they don't have that here, so I used leftover chicken thigh meat and marinated it overnight in barbecue sauce. How much sauce you'll need depends how much chicken you have - I had about 3 cups, and probably about a cup of sauce.

INGREDIENTS:
6-8 flour tortillas (8")
about 3 cups marinated chicken in BBQ sauce
about 1-1/2 cup shredded cheese
1 small can chopped green chills or fire roasted peppers

Plus these Optioinal toppings:
* sour cream for serving
* 2 diced tomatoes
* 1/4 to 1/2 cup sliced green onions / shallots

Preheat oven to 350F (180C)

Lay out one tortilla, put a bit of cheese on one half only. Put some of the BBQ chicken on top of that, a bit of green chilis/peppers, and a bit more cheese on top. Fold the top half of the shell over and lay on a baking sheet. Continue until your chicken runs out - I only got 6 today, but sometimes I get 8.

Bake the quesadillas for 12-20 minutes, depending on your oven and the brand of tortillas you used. Keep an eye on them, because brands of tortillas can vary in thickness and some take longer to bake. It will also take less time if you have a fan-forced oven, so I would watch them closely while they bake.

While they are baking, dice your tomatoes and green onions/shallots, and mix together in a small bowl to make a fresh salsa. Top finished quesadillas with sour cream and the fresh salsa. Enjoy! Visit and Like us on Facebook: https://www.facebook.com/Annas-Kitchen-1686376324950749/
