Okay we are going to start with the peeling paring. This one of my favorite paring knives. I use it for a lot of garnish work and also I love it because my kids love peeled apples and it fits right in your hand, and just gets the skin off the apple. I will demonstrate that in a second. Right now I would like to demonstrate how to make lemon crowns. 

Lemon crowns can be used for a variety of garnish. They are great for crab boils; they are great for fish dinners to garnish the plates with, a little parsley on them and you become a restaurant chef. So here we go. 

What we are going to do is start with the ends of the lemon and cut them off. This will help the lemon stand straight up whenever you put it on the plate. We are going to start in the middle of the lemon and bring the knife all the way down into the lemon. Bring it out and make a triangle. You are going to follow this around the middle of the lemon, all the way around until the ends meet back again. Just like this. 

These are great to put in your boiling water too whenever you are boiling shrimp or crab. Along with a little drawn butter. Okay we are at the end side now you just pull it open and there is your lemon crown.
