Enjoy making tasty treats while camping, hiking and relaxing.  This video was filmed in the Pineywoods of East Texas USA, November 6-8, 2018.   (Base Camp: Latitude: 30.5104 Longitude: -95.6623)

BASIC COOKIE AND CAKE RECIPE:
- 1 cup  self-rising flour**
- 1/2 cup sugar 
- 1/4 cup olive oil
- 1 small egg
- 1 tsp vanilla extract
**To make your own self-rising flour, combine 1 cup of all-purpose flour with 1-1/2 teaspoons of baking powder and 1/2 teaspoon of salt.

Mix ingredients together in plastic bag.

Variations:
-  Sugar cookies: Form into cookies on baking sheet covered with lightly oiled cooking paper.  Sprinkle sugar on cookies.  Bak in 360F oven until golden brown (10-20 minutes).
-  Oatmeal cookies:  replace 1 cup flour with 1/2 cup flour and packet of instant cook oatmeal and sweetener
-  Fruitcake cookies:  Sprinkle candied fruit pieces on basic cookies
-  Pineapple bundt cake:  Add small can of crushed pineapples in juice to basic recipe. Mix. Pour into one 6-inch bundt pan or two 3-inch bundt pans. Bake at 360F until done (about 45 minutes); powdered sugar topping optional
-  Mincemeat rum bundt cake:  Add 5 tablespoons of mincemeat to basic recipe.  Mix.   Pour into one 6-inch bundt pan or two  3-inch bundt pans. Add 2 tablespoons rum (or apple juice)  Bake at 360F until done (about 45 minutesJ). 


POPOVERS , YORKSHIRE PUDDING and DUTCH BABY PANCAKES use the same batter, but are baked differently.  Popovers are baked in individual molds (like muffins), usually coated with butter. Yorkshire Pudding uses the same batter, but is traditionally baked in the pan in which a piece of beef has been roasted, in the beef drippings.  Dutch Baby Pancakes are baked in a larger flat pan.

I use olive oil, rather than butter, in my outdoor / camping recipes because it is healthy and easy to take on the trail.

POPOVERS and DUTCH BABY PANCAKES
- 2 eggs
- 3/4 cup milk
- 3/4 flour
- 1/2 tsp salt
- Baking pan coated with olive oil
- (Optional, 1/3 cup sugar)

Heat oven to 450 F with generously greased (olive oil) cooking pan. Whisk eggs in bowl and gradually add remaining ingredients until smooth.  Use double cooking containers, separated by a thin  layer of sand to prevent scorching.   Pour batter into hot, well greased containers, 2/3 full.   Bake approximately 20 minutes.  Reduce oven temperature to 350F.  Continue baking until deep golden brown.  Remove from oven and serve hot.  Add toppings of choice, such as:  jam, fruit or meat.

CARDBOARD OVEN
Make the cardboard oven shown in this video from a corrugated cardboard box.  Cut cardboard into two pieces:  12 in x 28 in rectangle and 9-1/2 in diameter circle.  Glue heavy-duty aluminum foil to the cardboard with contact cement or white glue. Allow the glue to thoroughly dry for several days before using the oven.  Cardboard insulation provides stable temperature control, that is much better an oven with only aluminum sidewalls.  Use metal skewers as a baking rack.    In this demonstration, I used BioFuel as the heat source.  Allternatively, a can of Stereo, or charcoal in a fire bowl could be used.    Do not heat cardboard ovens above 450 F.   Do not expose cardboard ovens to direct flames of a campfire.
