Fermented foods may have hidden health benefits

CINCINNATI (WKRC) - Fermented foods are trendy, ancient and very good for you, and you can include them in your everyday menu.

Fermentation occurs when microorganisms, or bacteria, yeast and mold feed on other food components. A report from Tufts University says it changes the health-promoting characteristics in food, in some cases for the better.

You can find many of these fermented foods in your grocery store's natural food area. They include some common foods such as yogurt, known for bacteria benefit. But there are also a few that are not so common.

These include kefir. It's tangy like yogurt with fermented bacteria and yeast. Sauerkraut, which when fresh has live and active cultures. Certain cheeses are fermented food. Generally, the harder and older cheeses tend to be more fermented.

There are a few others you might get with some non-traditional meals. These are known as kimchi -- fermented cabbage -- and miso, a soybean paste.

Tempeh is also fermented soybeans. It's often used as a meat substitute.
